Toffuti Cream Cheese
Taco Seasoning (Cumin + Paprika + Chili Powder)
2-3 TBSP Lime juice
1-2 cloves garlic
Preheat oven to 400º.
Heat a little olive oil in a skillet, then add in onion + green pepper + garlic. Sauté.
Once onions become a bit translucent add in the the black beans, corn and seasoning. Add in a splash of water to mix the seasoning onto everything (and keep from sticking).
Remove from heat and add in 1/3 C Tofutti cream cheese (or any other vegan cream cheese) + lime juice and mix well.
Spoon filling into tortillas, roll up and place seam side down on baking sheet.
Brush tops of rolled taquitos with olive oil + sprinkle with salt.
Back for 15-25 minutes depending on oven + desired crispness.
Serve with homemade salsa + quacamole for dipping.
